I was thinking about heading to Ocala in a few weeks for a day hike...I know you know that area, I was wondering at what time does it become "too hot, even for Floridians?"

Thank you ... I've missed ya!  We've done a little hiking but not nearly enough.  It was part of my New Years Resolution to get back out there =) 

 

oh by the way, in case you were wondering what kinda decent chef finds himself off work on a friday night, I have only found work so far as a breakfast cook, slinging hash and eggs benedict for the fighting 4077. lol, mash reference. but yeah thats what had me home on a friday night. making good money at it tho and i do enjoy getting the work outta the way in the morning and getting off work in time to hop in my kayak for an hour or so.

pretty versatile with my cooking. at the last restaurant i worked in up in michigan i did a sushi night but enjoy adding new levels to traditional fare. something like parmesean and pistachio encrusted swordfish with roasted red pepper puree and a wasabi mash potato, something along those lines. my brother heads the history deppartment at USF, is a fellow foodie, does occasional reviews for creative loafing and wrote a book about Ybor's Colombia restaurant. im a foodie as well but a bit less refined, a bit more adventurous. did a dynamite (i thought) glazed ham for christmas, a 4 part 2 wet, 2 dry glaze of brandy (sprayed on with a water bottle), brown sugar, brown mustard, and crushed ginger snaps. it was good. and Jesus wept.
